Bacon Jam Burgers

  • 2 pounds 80/20 ground beef
  • 4 buttery croissants
  • 4 slices pepper jack cheese
  • ¼ cup pickled jalapeños
  • 3 tbsp favorite burger seasoning
  • 4 tbsp chipotle mayo

Maple Bourbon Bacon Jam

  • 1 pound thick-cut bacon
  • 1 large yellow onion, diced
  • ½ cup brown sugar
  • ½ cup maple syrup
  • ¼ cup apple cider vinegar
  • 4 cloves garlic, minced
  • ¼ cup bourbon

Instructions

  1. Cut the bacon into small pieces and dice the yellow onion.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels.
  3. Drain the skillet, leaving 3 tablespoons of bacon grease. Add the onion and cook for 15–20 minutes until softened and caramelized.
  4. Add the bourbon and carefully ignite with a long lighter to burn off the alcohol.
  5. Once the flame has disappeared, add the bacon, brown sugar, maple syrup, apple cider vinegar, and garlic.
  6. Cook over medium-low heat for 5–10 minutes until the mixture thickens to a jam-like consistency. Remove from heat.
  7. Divide the ground beef into eight ⅓-pound balls.
  8. Preheat a griddle over high heat. Place the beef balls on the hot surface and smash them into thin patties.
  9. Season the patties and cook for approximately 4 minutes. Flip, add pepper jack cheese, and cook for another 1–2 minutes until melted.
  10. Toast the inside of the croissants until golden brown.
  11. Assemble each burger with two patties, bacon jam, pickled jalapeños, and chipotle mayo.
  12. Serve immediately and enjoy!
