- 2 pounds 80/20 ground beef
- 2 XL Grande Tortillas
- 1 cup shredded pepper jack cheese
Bacon jam
- 1 lb thick cut bacon
- 1 large onion, finely diced
- 4 diced jalapeños
- ½ cup maple syrup
- ¼ cup apple cider vinegar
- ¼ cup brown sugar
- 4 oz bourbon
Burger sauce
- 1 cup mayo
- 2 tbsp ketchup
- 1 tbsp relish
- 1 tbsp hot sauce
- 1 tbsp mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp water
Instructions
- Take 1 pound of ground beef and thinly spread it out onto the tortilla making sure it’s covered to the very edge. Season with your favorite burger seasoning.
- Mix together ingredients for the burger sauce then set aside.
- On a hot griddle, cook the bacon until crispy and the diced onion and jalapeño until they become translucent.
- Place a skillet on the griddle then move the bacon jalapeño and onions and add the remaining bacon jam ingredients. Cook down for 15 minutes until it’s sticky and begins to caramelize.
- Place the tortilla down on the hot griddle meat side down. Take a burger press or spatula and press the meat down.
- Let it cook for 5 minutes untouched then carefully flip the tortilla, tortilla side down.
- Add pepper jack cheese, bacon jam, burger sauce, more cheese then fold the tortilla over.
- Let it cook for 2-3 minutes each side until golden brown on both sides.
- Remove from the griddle, slice into thirds then serve warm!
