BBQ Beef Sliders

Easy BBQ Beef Sliders made with smoked shredded beef, pepper jack cheese, and barbecue sauce on Hawaiian rolls. Perfect game day appetizer.

Ingredients

  • 4 lb chuck roast
  • 2 tbsp mustard
  • 4 tbsp BBQ rub
  • 3 tbsp butter
  • ¼ cup Cherry Dr. Pepper
  • 2 cups BBQ sauce
  • ½ cup crispy onions
  • 8 slices pepper jack cheese
  • 3 tbsp everything bagel seasoning
  • King’s Hawaiian rolls (orange pkg)

Instructions

  1. Cube a well marbled chuck roast then use yellow mustard as a binder and season on all sides with your favorite bbq rub.
  2. Place the seasoned chuck roast cubes on a wire rack. Place them on the smoker at 250°F for 3-4 hours, spritz with Cherry Dr. Pepper every hour.
  3. Once the bark is set on the beef, wrap in foil with 3 tbsp butter, 1/4c Dr. Pepper and one cup of BBQ sauce.
  4. Place them back on the smoker for another 2-3 hours until they’re fall apart tender. This typically occurs when the meat reaches an internal temperature between 200-205°F.
  5. Slice the Hawaiian rolls in half horizontally. Place the bottom half of the roll and top half of the roll cut-side up on a baking sheet. Toast at 325°F for 5–7 minutes, or until lightly golden.
  6. Assemble the sliders on toasted slider rolls, 4 slices of pepper jack cheese, smoked bbq beef (covering the whole slider), crisp onions, 1 cup bbq sauce, 4 slices of pepper jack cheese.
  7. Put the top of the sliders back on brush on butter and top with everything bagel seasoning.
  8. Bake at 325°F for 15-20 minutes until golden brown.
  9. Slice them up individually, then enjoy!
