- 1 pound smoked brisket
- 1 green bell pepper, sliced
- 1 Large onion, sliced
- 8 oz pepper jack cheese, shredded
- ¼ cup Pickled jalapeños
- ½ cup fresh cilantro
- ¼ cup bbq sauce
Instructions
- Add one sliced bell pepper and one sliced onion to a hot griddle. Let them cook for 5 to 7 minutes until soft.
- Add the brisket to the griddle, then let it cook for 2 minutes each side. Chop the brisket up into bite-size pieces then set aside.
- Assemble the quesadilla on an xl burrito tortilla with pepper jack cheese, brisket, pickled jalapeños, cilantro, bbq sauce, peppers and onions
- Fold the tortilla in half then cook it for 2 to 3 minutes each side until golden brown and the cheese is melted.
- Transfer the quesadilla to a cutting board then cut it into thirds in the shape of a triangle.
- Serve warm and enjoy!
