These easy BBQ meatball sliders combine juicy cheddar-stuffed meatballs, melted pepper jack cheese, jalapeños, buttery Hawaiian Rolls, tangy BBQ sauce, ranch dressing, and cilantro.

  • Total Time: 1 hour 35 minutes
  • Yield: 12-15 Sliders 1x

Ingredients

Scale
  • 2 pounds ground beef
  • ½ cup Panko breadcrumbs
  • 4 ounces cheddar cheese, shredded
  • 4 ounces pepper jack cheese, shredded
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons cilantro, finely chopped
  • 2 jalapeños, thinly sliced
  • 1 large egg
  • ½ cup BBQ sauce
  • ½ stick garlic herb butter
  • 2 tablespoons red onion, finely diced
  • ¼ cup ranch dressing
  • King’s Hawaiian Rolls

Instructions

  1. Add ground beef, cheddar cheese, egg, breadcrumbs, parsley, cilantro, and ¼ cup BBQ sauce to a large bowl and mix until combined.
  2. Form the mixture into 12–15 evenly sized meatballs, rolling them firmly so they hold together.
  3. Place the meatballs on a wire rack and smoke at 275 degrees F for 1 hour.
  4. Brush the meatballs with the remaining BBQ sauce during the final 15 minutes. Remove them once they reach 155 degrees F internally.
  5. Cut a circle into the bottom of each slider bun and brush melted garlic herb butter over the inside and outside.
  6. Add pepper jack cheese to the bottom circle of each bun, then place one meatball directly on top.
  7. Top each meatball with diced red onion, sliced jalapeño, and additional pepper jack cheese.
  8. Bake at 350 degrees F for 15 minutes, until the cheese melts and the buns are golden brown.
  9. Drizzle with BBQ sauce and ranch dressing, then sprinkle with cilantro. Cut the sliders individually, serve warm, and enjoy!
