Ingredients

- 3 pounds of chicken wings
- 3 tbsp of SPG blend (salt, black pepper and garlic powder)
- 1 tbsp cornstarch
Bacon Jam Ingredients
- 6 slices of thick cut bacon
- ½ yellow onion
- 3 cloves of garlic
- ¼ cup apple cider vinegar
- ¼ cup of maple syrup
- ¼ cup brown sugar
- ¼ cup bourbon
Instructions
- Season 1 1/2 pounds of wings with salt, black pepper, garlic powder and add in 1 tbsp of cornstarch to help crisp up the skin.
- Grill wings indirectly at 350° F for 1 hour, flip half way through. add in cherry wood at the beginning of the cook for smoke flavor.
- Make your Bacon Jam: Slice up 1/4 lb of bacon, cook until it starts to crisp up then remove bacon and leave 1 tbsp bacon fat and sauté 1/2 onion and 3 cloves of garlic for about 5 mins. Add bacon back in, 1/4 cup apple cider vinegar, 1/4 cup maple syrup, 1/4 cup brown sugar, 1/4 cup bourbon and cook for 5 mins until it thickens
- Finish wings over direct heat and remove once they reach an internal temperature of 185° F.
- Place the wings in a large bowl then add in the bacon jam and mix it thoroughly so all of the wings are coated.
