- 12 jalapeño poppers
- 1 pound chopped brisket
- 2 tbsp Hot Honey
Homemade Pimento Cheese
- 1 block softened cream cheese
- 2 cup cheddar cheese, shredded
- 4oz pimentos
- ¼ cup Pickled jalapenos
- ½ cup mayo
- ½ tsp each: onion powder, garlic powder, salt, black pepper, cayenne pepper, smoked paprika
Instructions
- Assemble pimento cheese by combining all ingredients in a bowl then set aside.
- Add the chopped brisket in with the pimento cheese then mix thoroughly until fully combined.
- Cut the whole jalapeños in half then remove the seeds and core.
- Stuff each jalapeño half with the brisket pimento mixture.
- Place them in a wire rack then smoke them at 275°F for 45 minutes.
- Remove once the jalapeños are soft. Drizzle with hot honey then serve warm and enjoy!
