Cheeseburger Potato Skins
- 3 large russet baking potatoes
- 1 pound 80/20 ground beef
- ½ cup sour cream
- 4 ounces pepper jack cheese, shredded
- 5 slices thick-cut bacon
- 3 slices American cheese, cut in half
- 3 tablespoons burger seasoning
- 3 tablespoons SPG blend
Burger Sauce
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 tablespoons pickled jalapeños, finely minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- Wash the potatoes and poke several holes in each with a fork. Bake at 400°F until soft in the center. Allow them to cool enough to handle.
- Fry the bacon in a skillet until crispy. Remove it from the skillet, then crumble or chop it into small pieces.
- Combine the mayonnaise, ketchup, mustard, pickled jalapeños, apple cider vinegar, garlic powder, and smoked paprika in a bowl. Mix thoroughly and refrigerate until ready to serve.
- Preheat the oil to 350°F. Alternatively, use an air fryer to crisp the potato skins. Cut the potatoes in half and scoop the potato flesh into a bowl, leaving enough potato inside the skins to keep them sturdy.
- Add the sour cream, pepper jack cheese, crispy bacon, and SPG blend to the potato. Mix thoroughly until creamy and well combined.
- Place the hollowed potato skins in the hot oil and fry for 5–7 minutes, flipping halfway through. Remove and place on a wire rack once golden brown and crispy.
- Next, scoop 2–3 tablespoons of the potato mixture into each crispy potato skin. Then, sprinkle additional shredded pepper jack cheese over the top.
- Divide the ground beef into six portions and season with burger seasoning. Press a thin layer of beef over the potato mixture, making sure it completely seals the filling.
- Preheat the grill to medium-high heat. Place the potato skins beef-side down over direct heat and cook for 4–5 minutes. Then, move them to the upper rack or indirect heat and continue cooking for another 3–4 minutes, or until the beef reaches a safe internal temperature.
- Place half a slice of American cheese on each potato skin. Allow the cheese to melt, then carefully remove the potato skins from the grill.
- Serve the Cheeseburger Potato Skins whole or cut them in half. Serve with the chilled burger sauce for dipping and Enjoy!
