- 1 pound boneless skinless chicken thighs
- ½ pound thick cut bacon
- 4 Russet baking potatoes
- ¼ cup butter, melted
- 1 cup shredded cheddar cheese
- ½ cup milk
- ½ cup sour cream
- ¼ cup green onions
- 2 tbsp SPG seasoning
Homemade Ranch
- ¾ cup sour cream
- ½ cup mayo
- ¼ cup chicken broth
- 1 tsp apple cider vinegar
- 1 tbsp dill
- 1/2 tbsp parsely
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Coat your potatoes in olive oil and bake at 425°F for about 1 hour, until soft.
- Make the homemade ranch by combining all of the ranch ingredients. Mix thoroughly until combined then refrigerate until serving.
- Cut the potatoes in half, then scoop out the insides into a bowl.
- Fry the potato skins in neutral oil at 350°F until golden brown.
- Combine the cooked potatoes with Butter, Cheese, milk, sour cream, chives, SPG blend.
- Mix thoroughly then stuff each potato skin until it’s ⅔ full.
- Season the chicken thighs with your favorite poultry seasoning.
- Grill the chicken thighs over direct heat flipping every 2 minutes until they reach 170F internal temp.
- Rest the chicken for 5 minutes then cut into bite sized pieces.
- Top the potato skins with chicken, bacon and cheese then bake at 350°F until the cheese is melted.
- Top with homemade ranch and enjoy!
