- 2 pounds of pork belly
- 4 tbsp SPG blend (salt, pepper, garlic powder)
Chili garlic oil
- 3 cloves finely minced garlic
- 1 finely minced shallot
- 1 tbsp finely minced ginger
- 1 tsp salt
- 1/4 cup Korean Chillies
- 1 tbsp Red Pepper Chili flakes
- ⅔ cup avocado oil
Homemade Guac Ingredients
- 4 ripe avocados
- 1 bunch fresh cilantro, chopped
- 2 jalapeño peppers, diced
- ¼ cup red onion, finely diced
- Juice from ½ lime
- 1 tsp garlic powder
- 1 tsp sea salt
- ½ tsp black pepper
Instructions
- Cut pork belly into 1 inch thick slices and approximately 4 inches long.
- Place them on a wire rack then coat in oil. Season with SPG on all sides.
- Place the pork belly on the smoker at 250F for 3-4 hours.
- Assemble the chili garlic oil by combining all ingredients in a porcelain bowl. Carefully pour in 375F degree hot oil then mix it and let it sit until serving.
- Remove the pork belly from the smoker once it reaches an internal temp of 185F.
- Place the pork belly in the air fryer at 400F for 3-4 mins each side until the outside becomes crispy.
- Serve with the fresh guac for dipping and enjoy!
