Ingredients

- 2 pounds boneless skinless chicken thighs
- 3 Sweet potatoes, peeled and cubed
- 2 ripe avocados
- 2 cups Cottage Cheese
- 2 tbsp Hot Honey
- 1/2 tsp Red pepper flakes
Marinade
- 3 chipotle peppers in adobo sauce
- ¼ cup avocado oil
- 4 cloves chopped garlic
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- Juice from 1 lime
Chipotle Honey Sauce
- 2 chipotle peppers in adobo
- ½ cup raw honey
- 1 tsp smoked paprika
- Juice from 1 lime
Instructions
- Combine all of the ingredients for the marinade in a blender then blend until smooth.
- Place chicken thighs in a ziplock bag then pour the marinade over top. Marinate for 2-24 hours.
- Blend the ingredients for the Chipotle Honey Sauce until smooth then set aside.
- Peel the sweet potatoes then dice them into ½ inch cubes. Coat the cubes in oil then season with smoked paprika, garlic powder, salt and pepper.
- Place the sweet potato cube in the air fryer at 375°F for 15 minutes until crispy. Stir them every 5 minutes while they cook.
- Remove the chicken thighs from the marinade then grill them over medium-high heat flipping every 2 minutes. Remove once the chicken reaches an internal temperature of 165°F.
- Cut the chicken up into bite size cubes then place in a bowl. Pour the Chipotle Honey Sauce over top then mix until the chicken is fully coated in the sauce.
- Assemble bowl keep each item separate: Chipotle Honey chicken, Cubed sweet potatoes, Cottage cheese, avocado chunks.
- Top with a small pinch of crushed red pepper and a drizzle of hot honey then enjoy!
