Crispy BBQ Pork Belly is the perfect appetizer! Pork Belly smoked then air fried coated in sticky BBQ sauce served with fresh guacamole.

Ingredients

Scale
  • 2-3 pounds pork belly
  • 1 tbsp avocado oil
  • 2 tbsp SPG
  • 1 tbsp BBQ Rub
  • ½ Cup BBQ sauce

Guacamole Ingredients

  • 4 ripe avocados
  • 1 bunch fresh cilantro, chopped
  • 2 jalapeño peppers, diced
  • ¼ cup red onion, finely diced
  • Juice from ½ lime (lots of lime juice keeps it bright!)
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • ½ tsp black pepper

Instructions

  1. Cut pork belly into 1 inch thick slices and approximately 4 inches long.
  2. Place them on a wire rack then coat in oil then season with SPG and a BBQ rub on all sides.
  3. Place the pork belly on the smoker at 250°F for 3 hours.
  4. Assemble the guacamole by combining all of the ingredients and mix thoroughly then refrigerate.
  5. Remove once the pork belly reaches an internal temp of 185F.
  6. Place the pork belly in the air fryer at 400°F for 3-4 mins each side.
  7. Lightly coat the pork belly BBQ sauce the last minute of the air fryer to allow it to tack up to the pork belly.
  8. Serve with Guac for dipping and enjoy!
