Ingredients

- 1 pack tortellini
- 1 package smoked sausage
- 1 red bell pepper
- 1 green bell pepper
- 1 large sweet onion
- Freshly grated Parmesan cheese
Creamy Italian Dressing
- ½ cup mayo
- ⅓ cup olive oil
- ¼ cup red wine vinegar
- ¼ cup grated Parmesan cheese
- Juice from ½ lemon
- 1 tbsp garlic paste
Instructions
- Thinly slice the bell peppers and onions with a sharp knife.
- Cut up the smoked sausage into ¼ inch thick slices.
- Make the dressing by combining all of the ingredients in a bowl and mix until combined.
- Add the peppers and onions to a hot griddle and cook over medium high heat for 8-10 minutes.
- Add the sausage and cook for 2 mins each side until they have nice char on both sides.
- Move the sausage and mix in with the peppers and onions then reduce to low heat.
- Add some frozen tortellini to the griddle over medium heat. Drizzle some water on top then cover to steam the tortellini.
- Mix all of the ingredients together then drizzle 1 cup of the dressing over top and mix thoroughly.
- Remove all of the ingredients from the griddle then serve warm. Garnish with a freshly grated Parmesan cheese and a drizzle of dressing.
