Grilled Shrimp Boil Skewers are the perfect twist on the classic shrimp boil. Shrimp, potatoes, corn and sausage all perfectly grilled.

Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 1/2 pound of smoked sausage, cut into 1-inch slices
  • 12 ears of fresh corn, cut into 1-inch rounds
  • 1012 small red potatoes / baby potatoes, parboiled
  • 1 lemon, cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons of Cajun seasoning
  • 1 tablespoon of Old Bay seasoning
  • Fresh parsley, chopped for garnish

Instructions

  1. In a small bowl, combine the olive oil, Cajun seasoning, and Old Bay seasoning.
  2. Cut the corn into 2 inch thick rounds with a sharp knife. 
  3. Bring a pot of water to a boil then place the cut up corn and potatoes in for 10 minutes. Rinse with cold water when done.
  4. Assemble the skewers with smoky sausage, followed by a shrimp, a round of corn, and a potato. 
  5. Place skewers on a preheated grill at 400°F and grill for 3-4 minutes each side. Remove when shrimp is opaque and the vegetables have grill marks. 
  6. Give the skewers a spritz of fresh lemon, then brush on some melted butter and top with more old bay seasoning. 
  7. Serve warm then enjoy!
