- 1 pound of large shrimp, peeled and deveined
- 1/2 pound of smoked sausage, cut into 1-inch slices
- 1–2 ears of fresh corn, cut into 1-inch rounds
- 10–12 small red potatoes / baby potatoes, parboiled
- 1 lemon, cut into wedges
- 1/4 cup olive oil
- 2 tablespoons of Cajun seasoning
- 1 tablespoon of Old Bay seasoning
- Fresh parsley, chopped for garnish
Instructions
- In a small bowl, combine the olive oil, Cajun seasoning, and Old Bay seasoning.
- Cut the corn into 2 inch thick rounds with a sharp knife.
- Bring a pot of water to a boil then place the cut up corn and potatoes in for 10 minutes. Rinse with cold water when done.
- Assemble the skewers with smoky sausage, followed by a shrimp, a round of corn, and a potato.
- Place skewers on a preheated grill at 400°F and grill for 3-4 minutes each side. Remove when shrimp is opaque and the vegetables have grill marks.
- Give the skewers a spritz of fresh lemon, then brush on some melted butter and top with more old bay seasoning.
- Serve warm then enjoy!
