Italian Grinder Tortellini

  • 18 ounces three cheese tortellini
  • 4 ounces salami, sliced
  • 4 ounces pepperoni, sliced
  • 4 ounces ham, sliced
  • ¼ cup pepperoncini peppers, sliced
  • ¼ cup red onion, finely diced
  • 1½ cups grape tomatoes, sliced in half
  • ½ cup freshly grated parmesan cheese

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano

Instructions

  1. Cook tortellini according to package directions until al dente. Drain and rinse with cold water.
  2. Slice the deli meats, vegetables, and grate the parmesan cheese.
  3. Combine mayonnaise, red wine vinegar, seasonings, garlic powder, and oregano. Mix until smooth.
  4. Add all ingredients to a large bowl. Pour dressing over the top and mix until evenly coated.
  5. Serve immediately or refrigerate until ready to enjoy.
