Italian Grinder Tortellini
- 18 ounces three cheese tortellini
- 4 ounces salami, sliced
- 4 ounces pepperoni, sliced
- 4 ounces ham, sliced
- ¼ cup pepperoncini peppers, sliced
- ¼ cup red onion, finely diced
- 1½ cups grape tomatoes, sliced in half
- ½ cup freshly grated parmesan cheese
Dressing
- 1 cup mayonnaise
- 2 tablespoons red wine vinegar
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon oregano
Instructions
- Cook tortellini according to package directions until al dente. Drain and rinse with cold water.
- Slice the deli meats, vegetables, and grate the parmesan cheese.
- Combine mayonnaise, red wine vinegar, seasonings, garlic powder, and oregano. Mix until smooth.
- Add all ingredients to a large bowl. Pour dressing over the top and mix until evenly coated.
- Serve immediately or refrigerate until ready to enjoy.
