Italian Pasta Salad

Italian pasta salad delivers fresh flavor with rotini, colorful veggies, and homemade dressing. This easy recipe is perfect for summer gatherings.

Ingredients

  • 1 pound rotini
  • 1 tbsp olive oil
  • 6 oz salami, cubed
  • 6 oz pepperoni, cubed
  • 4 oz white cheddar cheese, small cubes
  • 1 cup black olives
  • 1 cup cherry tomatoes, halved (use a multi‑color pack: orange, yellow, red, purple)
  • 1 orange bell pepper, thinly sliced
  • ¼ cup finely chopped italian parsley

Homemade Italian Dressing

  • 1 cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp coarse sea salt
  • 1 tsp garlic powder
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 tsp coarse black pepper

Instructions

  1. Boil the pasta according to the instructions on the packaging until al dente.
  2. Prepare all ingredients for the pasta salad by cutting the salami, pepperoni, cheese, tomatoes, and bell pepper.
  3. Assemble the dressing by combining all dressing ingredients in a bowl or jar. Mix thoroughly, then set aside.
  4. Place the cooled pasta into a large bowl, then add the remaining ingredients and mix thoroughly.
  5. Pour the dressing over the top and mix again. Note: if you are not serving immediately, refrigerate the pasta salad and wait to add the dressing until right before serving.
