- 1 pound rotini
- 1 tbsp olive oil
- 6 oz salami, cubed
- 6 oz pepperoni, cubed
- 4 oz white cheddar cheese, small cubes
- 1 cup black olives
- 1 cup cherry tomatoes, halved (use a multi‑color pack: orange, yellow, red, purple)
- 1 orange bell pepper, thinly sliced
- ¼ cup finely chopped italian parsley
Homemade Italian Dressing
- 1 cup olive oil
- ¼ cup red wine vinegar
- 1 tsp coarse sea salt
- 1 tsp garlic powder
- 2 tsp dried basil
- 2 tsp dried oregano
- 1 tsp coarse black pepper
Instructions
- Boil the pasta according to the instructions on the packaging until al dente.
- Prepare all ingredients for the pasta salad by cutting the salami, pepperoni, cheese, tomatoes, and bell pepper.
- Assemble the dressing by combining all dressing ingredients in a bowl or jar. Mix thoroughly, then set aside.
- Place the cooled pasta into a large bowl, then add the remaining ingredients and mix thoroughly.
- Pour the dressing over the top and mix again. Note: if you are not serving immediately, refrigerate the pasta salad and wait to add the dressing until right before serving.
