Ingredients

- 2 cups rotini pasta
- 6 ears of fresh sweet corn
- ½ pound thick cut bacon
- 1 bunch cilantro, finely cut up
- 2 jalapenos, finely diced
- ⅓ cup cotija cheese
- 1 tbsp tajin seasoning
Dressing
- 1 cup Sour Cream
- ½ cup Mayo
- Juice from 1 lime
- 1 tbsp Lime Zest
- 1 tsp Smoked Paprika
- 1 tsp garlic powder
- 1 tsp Chili powder
- ½ tsp cracked black pepper
- ½ tsp sea salt
Instructions
- Boil the pasta according to the packaging so that it’s al dente.
- Cook bacon in a skillet over medium heat until crispy then chop bacon up into small pieces.
- Peel the husk from the corn cob, brush avocado oil on the corn cobs then grill over high heat (direct flame) until it has char on all sides.
- Cut the corn from the cob then let it cool down.
- Mix the dressing ingredients together until fully combined.
- Combine the cooked pasta, corn, bacon, cilantro, jalapenos and cotija cheese in a bowl.
- Pour the dressing over top then mix thoroughly.
- Garnish with corn, cilantro, cotija cheese, diced jalapeno and tajin seasoning.
