Ingredients

- 2 pounds of 80/20 ground beef
- 8 slices of pepper jack cheese
- 2 tbsp of burger seasoning
- 4 Brioche Burger Buns
- 4 tbsp Chunky Peanut Butter
Bacon Jam
- 1 pound of thick cut bacon
- 1 large yellow onion
- ¼ cup brown sugar
- ¼ cup maple syrup
- ¼ cup apple cider vinegar
- 4 oz bourbon
Instructions
- Make the bacon jam by slicing up the bacon into bite size pieces then cooking in a skillet. Remove bacon once crispy and drain the excess bacon grease.
- Add diced onions and cook for 10-15 minutes over medium heat until softened and they begin to caramelize.
- Add the remaining bacon jam ingredients then mix thoroughly. Cook over medium low heat for 10 minutes until thickened.
- Preheat the griddle to high heat.
- Take the ground beef then form them into ¼ pound balls.
- Add the burger balls down then take a burger press and smash them down until thin. Season with a burger rub.
- Flip burgers after 2-3 minutes then add slices of cheese and let them cook for 2 more minutes until melted
- Spread a thin layer of mayo on the inside of the burger buns, then toast them on the griddle for 2-3 minutes until golden brown.
- Assemble the burger with 2 or 3 patties on the bottom, then top the patties with ¼ cup bacon jam. Spread peanut butter on the inside of the top bun then place on top and let the peanut butter melt.
- Serve with a side of fries and a cold beverage then enjoy!
