Pineapple Bourbon Pork Belly Burnt Ends are the perfect appetizer! Smoked pork belly coated in sweet, sticky Pineapple BBQ sauce.

Ingredients

Scale
  • 3 pounds of pork belly
  • 1 tbsp yellow mustard
  • 3 tbsp BBQ rub
  • 3 tbsp butter
  • 2 tbsp brown sugar
  • 1/2 cup of BBQ sauce

Pineapple Bourbon BBQ Sauce

  • 1 cup of crushed pineapple
  • 1/2 cup brown sugar
  • 4 oz of bourbon
  • 1/4 cup Bachan’s Japanese BBQ Sauce

Instructions

  1. Preheat your smoker to 225°F and use apple wood for a sweet smokey flavor.
  2. Cube the pork belly into 1.5 x 1.5 inch cubes.
  3. Use yellow mustard as a binder to coat the pork belly cubes then season them with a BBQ rub.
  4. Place the pork belly on the smoker at 225°F for 2.5 hours. Spritz them every hour with 1 cup of pineapple juice.
  5. Put the pork belly in an aluminum foil pan with 3 tbsp butter and 2 tbsp of brown sugar. Cover the pan with aluminum foil then place them back on the smoker for an additional 45 minutes.
  6. Combine ingredients for homemade bbq sauce,
  7. Uncover the pan the last 15 minutes then add in bbq sauce.
  8. Remove from the smoker once they reach 200° F.
