- 2 pounds of 80/20 ground beef
- ½ pound thick cut bacon
- 1 Large Yellow Onion
- 4 Brioche burger buns
- Pepper jack cheese slices
- 1 tbsp burger seasoning
Baconaise Sauce
- ½ cup Mayo
- ½ cup Crispy bacon
- 2 tbsp Ketchup
- 1 tbsp Hot Honey
- 1 tbsp Yellow Mustard
- 1 tsp Red pepper flakes
- 1 tsp chives
- ½ tsp black pepper
Instructions
- Slice bacon into small bite size pieces then cook it on the griddle until crispy.
- Let the bacon cool down, then put together the Baconaise sauce. In a bowl combine: mayo, bacon, ketchup, hot honey, mustard, red pepper flakes, chives and black pepper. Mix thoroughly then set aside until serving.
- Form ground beef into ¼ lb balls
- Slice the onion into ¼ inch thick circles – try to keep them together and not let them fall apart.
- Place the round sliced onion down on the griddle and let it cook for 3 minutes before flipping. Remove once the onion is soft.
- Place the balls of ground beef down on the hot griddle over high heat and smash down with a burger press.
- Season the patties with your favorite burger seasoning then let the patties sit for 3 minutes to form crust
- Flip the patties over and immediately add a slice of pepper jack cheese to each patty and remove once the cheese is melted.
- Spread mayo in the inside of the burger buns, then place on the hot griddle. Remove once golden brown.
- Assemble the burger: sauce on the bottom bun, burger patty, light sauce on the patty, burger patty, onion, sauce on top bun.
