- 3 pounds of Chicken thighs
- ¼ cup Bachan’s Japanese Barbecue Sauce
- 4 tbsp BBQ rub
- 3 tbsp Hot Honey
- 2 tbsp Lemon zest, for garnish
- 2 tbsp Coarse cracked black pepper, for garnish
Lemon Pepper Sauce
- 1 stick of butter
- ¼ cup hot honey
- Juice from 1 lemon
- 1 tbsp lemon zest
- 1 head of roasted garlic
Instructions
- Drizzle Bachan’s on the chicken thighs then generously season both sides with a BBQ rub. Let the chicken marinate uncovered in the fridge for 1 hour or overnight.
- Preheat the smoker to 250°F using Cherry wood for a sweet smokey flavor.
- Place the chicken thighs on the smoker indirect of the heat for about 1 hour.
- Cut the head off of a bulb of garlic then drizzle olive oil on top. Wrapping foil then place in the oven at 400° for 45 minutes. Remove once the garlic darkens.
- Make the Hot lemon pepper sauce by combining all of the ingredients in a sauce pan. Cook over medium heat for 5-7 minutes until everything combines and it begins to thicken. Note: the sauce should be smooth, blend the sauce for 20 seconds if needed.
- Increase the temperature of the smoker to 350°F for 15-20 minutes then glaze the chicken thighs with Hot Honey.
- Remove the chicken once it reaches an internal temperature of 170°F.
- Brush the hot lemon pepper sauce on both sides of the chicken thighs then garnish with lemon zest and black pepper and enjoy!
