- 1 rack of baby back ribs – Please find some thick ones
- 3 tbsp BBQ rub
- 1 pound of thick cut bacon
- 4 tbsp butter
- ¼ brown sugar
- ½ cup pure maple syrup
- ¼ cup bbq sauce
- 2 tbsp mustard (binder)
Instructions
- Cut a rack of baby back ribs into individual ribs by cutting between each bone.
- Coat each ribs in yellow mustard as a binder then generously season with a BBQ rub
- Place the ribs on the smoker and let them smoke at 250°F for 2.5 hours.
- Cut the raw bacon into ½ inch chunks then cook in a skillet over medium heat. Remove once crispy.
- Once their bark is set, place them in a foil pan with 4 tbsp butter, 1/4 cup brown sugar, 1/2 lb crispy crumbled bacon, 1/2 cup pure maple syrup, 1/4 cup bbq sauce
- Cover with aluminum foil then place back on the smoker for another hour.
- Remove them once they reach an internal temp of 200°F then drizzle with more maple syrup on top and enjoy.
