- 16 oz ribeye steak
- 1 pack taco seasoning
- 1 green bell pepper
- 1 large yellow onion
- 1 cup cheddar cheese
- 1 cup Oaxaca cheese
- 1/2 bag Tater tots
- 4 large eggs
- 4 XL Grande Burrito Tortillas
Chipotle Crema Sauce
- 1 cup Mexican crema
- Juice from 1 lime
- 3 Chipotle pepper in adobo
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
Instructions
- Cube a ribeye into bite size pieces. Place in a bowl, add avocado oil then season with a tacos seasoning packet.
- Dice up a yellow onion and green bell pepper
- Cook tots in air fryer until crispy
- Make sauce, blend ingredients until smooth and the sauce is bright orange. Add water if too thick
- Add peppers and onions to a hot griddle and cook for 5 minutes then add the steak bites and cook for 3-5 minutes until done.
- Add scrambled eggs to the griddle, season with salt and pepper. remove when they are just undercooked, but formed.
- Warm up the tortilla then add shredded Oaxaca cheese, steak, eggs, tots, onions and peppers, cheddar cheese on top.
- Wrap the burrito tightly then cook for 2-3 mins on each side until golden brown on the outside.
- Wrap in foil for 2-3 minutes to ensure all of the cheese is melted.
- Slice in half then enjoy!
