- 16oz ribeye steak
- 2 tbsp steak seasoning
- Crispy french fries
- ¼ cup your favorite queso
- 2 tbsp chipotle cream sauce (herdez brand)
Elote Salad
- 4 ears grilled corn
- ½ diced red bell pepper
- 2 diced jalapeños
- 1/4 cup diced red onion
- ½ cup finely chopped cilantro
- ½ cup cotija cheese
- 2 tbsp mayo
- 1 tsp chili powder
- 1 tsp smoked paprika
- Juice from 1 lime
Instructions
- Use oil as a binder then season the ribeye with your favorite steak seasoning.
- Grab your fresh sweet corn and coat them in oil, then grill over direct heat. Rotate every minute until they have good char on then remove them and let them cool down.
- Grill the steaks over direct heat flipping them every minute until they reach your desired doneness.
- Place the fries in the air fryer according to the packaging.
- Assemble the Elote salad by cutting the corn from the cob. In a bowl, combine the corn, red bell pepper, jalapeños, red onion, cilantro, cotija cheese, mayo, chili powder, smoked paprika and lime juice. Mix then set aside.
- Slice the steak against the grain after a 10 minute rest, then cut it again into bite sized pieces.
- Assemble on a bed of fries with warm queso, steak, elote salad and a drizzle of Chipotle crema sauce.
