- 32 oz Tomahawk steak
- 2 tbsp Steak Seasoning
- Bourbon Bacon Jam Ingredients
- 1 lb bacon
- 1 large onion
- ¼ cup brown sugar
- ¼ cup apple cider vinegar
- 2 tbsp Bachan’s Roasted Garlic
- ¼ cup maple syrup
- 4oz bourbon
- 3 cloves garlic, minced
Instructions
- Bring tomahawk to room temp for 1 hour prior to cooking.
- Generously season the tomahawk on both sides with your favorite steak seasoning.
- Place the steak on the smoker indirect of the heat at 225°F for 30 minutes.
- Slice the bacon into small pieces then cook in a skillet. Remove once crispy.
- Remove excess grease except for 2 tbsp- cook diced onion in the grease over medium heat for 15 minutes (until caramelized).
- Add remaining bacon jam ingredients into skillet and cook down For 10-15 mins until it begins to bubble and thickens.
- Sear the tomahawk once it reaches an internal temp of 115F.
- Remove once it reaches an internal temp of 127F.
- Let it rest for 10-15 minutes then cover the steak in bacon jam ensuring the top is fully coated.
- Slice against the grain then enjoy!
