Ingredients

- 1 pound of 80/20 ground beef
- 2 slices of habanero jack cheese
- 1/8 cup pickled jalapenos
- 1 tbsp of BBQ sauce
- 4 oz of leftover brisket
- 2 brioche buns
- 2 tbsp of mayo
Bacon Jam
- 1 pound of bacon
- 1 diced yellow onion
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup pure maple syrup
- 4 oz bourbon
Instructions
- Dice an onion and cut the raw bacon into bite size pieces.
- Fry the bacon in a skillet over medium heat until crispy. Drain the excess grease less 1 tbsp for frying.
- Cook the onions for 10 minutes until softened then add the bacon back in with the rest of the ingredients for the bacon jam. Cook for 5-10 minutes until thickened.
- Season the burgers with your favorite seasoning then cook them over medium high heat.
- Add a slice of cheese on each patty when the burgers are almost done cooking.
- Reheat the brisket on the griddle for 2 minutes each side then toast the brioche buns.
- Assemble with the burger patty, pickled jalapeños, brisket, bacon jam then top with BBQ sauce.
