These bacon jam burgers are stacked high with juicy burger, smoked brisket, sweet bacon jam, pickled jalapenos and BBQ sauce.

Ingredients you will need
Burger: 80/20 ground beef
Bacon Jam: Bacon, yellow or white onion, brown sugar, maple syrup, apple cider vinegar and bourbon
Cheese: Habanero jack cheese, American cheese or white cheddar cheese
Seasoning: Your favorite burger rub or a SPG blend (salt, black pepper, garlic powder)
Brisket: Leftover smoked brisket or you can purchase some from your local BBQ joint
Burger Assembly: Brioche bun and BBQ sauce
How to make a Bacon Jam Brisket Burger
Making the Bourbon Bacon Jam
Start by making my Maple Bourbon Bacon Jam recipe. Dice up an onion then cut the raw bacon into bite size pieces. Cutting up the bacon raw will save time cooking it because you can fit it all into one skillet and smaller pieces cook faster.
Fry the cut up bacon in a large skillet over medium heat for 5-7 minutes until the pieces are crispy. Drain the excess bacon grease from the skillet less 1 tbsp for cooking the onions.

Cook the diced onion with 2 tbsp of butter for 10 minutes until they’re softened and they begin to char. You can also cook these on a lower heat for longer if you want your onions to be more caramelized.

Add the cooked bacon back into the skillet with the rest of the ingredients for the bacon jam. Cook over medium low for 5-10 minutes until thickened and it has a jam-like consistency.

Store the bacon in an airtight container in the fridge for up to 1 week. You can find the full step by step bacon jam recipe here.
Tip: When serving this for guests, make it a day ahead of time then reheat it when you’re getting ready to serve the food. This will save a lot of time and stress when entertaining.

Cooking up the burgers
Season the burgers with your favorite burger seasoning then cook them over medium-high heat. For this cook, I used some frozen Meat District beef patties, so I seasoned each beef patty after they were flipped on each side when cooking on the hot griddle.
For this cook, I used my griddle and power burger in my outdoor kitchen from KoKoMo Grills which provides me with a great covered outdoor space to cook in.

Add a slice of your favorite cheese on each patty when the burgers are almost done cooking. I like to remove my burgers once they reach an internal temperature between 150-155°F.
Reheat the leftover smoked brisket on the griddle for 1-2 minutes each side. I like to get the brisket extra crispy for a little crunchy texture.

Spread 1 tbsp mayo on the inside of the buns then toast them on the griddle for 2-3 minutes over medium heat until golden brown.
Assemble with the bottom bun, burger patty, pickled jalapeños, brisket, bacon jam then top with BBQ sauce. Finish with the toasted top bun on top and enjoy!

Bacon Jam Brisket Burger

Ingredients
- 1 pound of 80/20 ground beef
- 2 slices of habanero jack cheese
- 1/8 cup pickled jalapenos
- 1 tbsp of BBQ sauce
- 4 oz of leftover brisket
- 2 brioche buns
- 2 tbsp of mayo
Bacon Jam
- 1 pound of bacon
- 1 diced yellow onion
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup pure maple syrup
- 4 oz bourbon
Instructions
- Dice an onion and cut the raw bacon into bite size pieces.

- Cook the onions for 10 minutes until softened then add the bacon back in with the rest of the ingredients for the bacon jam. Cook for 5-10 minutes until thickened.
- Season the burgers with your favorite seasoning then cook them over medium high heat.
- Add a slice of cheese on each patty when the burgers are almost done cooking.
- Reheat the brisket on the griddle for 2 minutes each side then toast the brioche buns.
