Ingredients for Steak and Shrimp Loaded Tots

To create these decadent shrimp loaded tots, you’ll need the following:

  • 16 oz Ribeye or New York Strip Steak
  • 12 oz Jumbo Shrimp
  • ½ cup White Queso
  • ¼ cup Cilantro, chopped
  • ¼ cup Red Onion, diced
  • 1 Jalapeño, thinly sliced
  • ½ cup Guacamole (homemade or store-bought)
  • ½ bag of Tater Tots
  • Sour Cream (for optional garnish)

Step-by-Step Instructions for Steak and Shrimp Loaded Tots

1. Make the Guacamole

You can use store-bought, but fresh guac takes this dish over the top. In a bowl, combine mashed avocados, lime juice, diced tomatoes, red onion, garlic, salt, and chopped cilantro. Mix thoroughly and refrigerate until ready to serve.

2. Prep the Proteins

  • Steak: Season the ribeye or NY strip steak generously with your favorite steak seasoning. Let it rest at room temperature while you prep the shrimp.
  • Shrimp: Peel and devein the jumbo shrimp, then toss them in a Cajun seasoning blend. Thread them onto skewers for easy grilling.

3. Grill the Steak and Shrimp

  • Steak: Grill over medium-high heat until it reaches an internal temperature of 127°F for medium-rare. Let it rest before slicing against the grain into bite-sized pieces.
  • Shrimp: Grill the shrimp over direct heat for 2–3 minutes per side, just until they turn pink and slightly charred.

4. Cook the Tater Tots

While your proteins are resting, cook the tater tots. You can bake, deep-fry, or air fry them until golden brown and crispy.

If you’re using an air fryer, 400°F for about 15 minutes works great, shaking halfway through.

Tips for the Best Steak and Shrimp Loaded Tots

  • Choose the right cheese: White American melts best, but Monterey Jack or Pepper Jack can spice things up.
  • Use fresh shrimp: For better flavor and texture, skip the frozen precooked shrimp.
  • Crisp up your tots: Don’t overcrowd the tray or air fryer—space gives you that golden crunch.
  • Make it saucy: Want more heat? Add a drizzle of hot sauce or spicy aioli over the top.

Storage and Reheating

This dish is best enjoyed fresh, but leftovers can be stored in an airtight container for up to 2 days. Reheat in the oven or air fryer to regain crispiness. Avoid microwaving, as it will make the tots soggy.

Serving Suggestions

Serve these shrimp loaded tots as a standalone appetizer or as part of a surf-and-turf spread. Pair with ice-cold beer or a zesty margarita for the perfect flavor combo. If you’re hosting a party, consider setting up a DIY loaded tots bar so guests can customize with toppings like:

  • Extra cheese
  • Pickled jalapeños
  • Bacon bits
  • Scallions or green onions
  • Crumbled cotija cheese
