- 16 oz Ribeye or Ny Strip Steak
- 12 oz Jumbo Shrimp
- ½ cup White Queso
- ¼ cup Cilantro, chopped
- ¼ cup Red onion, diced
- 1 Jalapeno, thinly sliced
- ½ cup Guacamole
- ½ bag Tater tots
Instructions
- Make the guac by combining all of the ingredients in a bowl then mix thoroughly and refrigerate until serving.Season a steak with your favorite steak seasoning
- Season Jumbo shrimp with a cajun seasoning then place shrimp on skewers.
- Grill the steak and remove once it reaches and internal temp of 127°F
- Grill the shrimp over direct heat for 2-3 minutes each side.
- Make the homemade queso by melting butter in a saucepan then add the can of green chilies and cook for 2-3 minutes.
- Pour in the evaporated milk, cornstarch and seasonings then stir.
- Shred the blocks of cheese then add to the saucepan and stir until creamy.
- Slice the steak against the grain then cut into bite size pieces.
- Assemble on a bed of crispy tots: fries, queso, steak, shrimp, red onion, cilantro, jalapenos, guacamole
