Ingredients You’ll Need
You’ll bring this dish together with a blend of dairy, spices, and bacon-rich goodness:
- Bacon crumbles
- Diced jalapeños
- One block of cream cheese (room temperature works best)
- Elbow macaroni
- Velveeta cheese
- Shredded Gouda
- Shredded sharp cheddar
- Whole milk
- Unsalted butter
- Flour
- Garlic powder
- Black pepper
- Salt
- Hot sauce
- BBQ rub
- Cool Ranch Doritos (for an irresistible topping)
This combination gives you multiple layers of flavor—creamy, smoky, spicy, and crunchy.
How to Make Jalapeno Popper Mac and Cheese
1. Cook the Bacon and Jalapeños
Start by slicing a pound of bacon into small pieces. Fry it in a skillet until crispy, then remove and set aside.
Reserve about 2 tablespoons of bacon grease, and fry the diced jalapeños over medium heat until softened. This softens the jalapeños and builds the base flavor for your entire cheese recipe.
2. Boil the Elbow Macaroni
Bring a large pot of water to a boil and cook the elbow macaroni for about six minutes, just until al dente.
Strain and rinse under cold water to stop the cooking process—this helps them maintain the perfect texture when smoked later.
3. Build the Roux and Cheese Sauce
Melt butter in a saucepan, then whisk in flour to form a light roux.

Let it cook for a minute to remove raw flour taste. It should begin to bubble and form a paste.

Add milk, garlic powder, black pepper, salt, hot sauce, and the cheeses—Velveeta, cream cheese, and half of your shredded cheddar. Cook over medium-low heat until silky smooth. This luscious cheese sauce is what turns this into unforgettable homemade mac.

4. Assemble the Jalapeno Popper Mac
In a foil pan or baking dish, combine the noodles, cooked jalapeños, half the cooked bacon, shredded Gouda, the rest of your sharp cheddar, and additional whole milk.

Pour the melted cheese sauce over the top and mix until every piece of pasta is coated in creamy goodness.

5. Add the Signature Crunchy Topping
Top with sliced jalapeños, crushed Cool Ranch Doritos, extra bacon, and a sprinkle of BBQ rub. This adds texture and extra jalapeno popper flavor to your already creamy jalapeno popper Mac.

6. Smoke to Perfection
Place the foil pan on your smoker at 325°F over indirect heat. Smoke for 30–45 minutes, then increase to 400°F until it bubbles.
The added smoke takes the dish beyond average mac and gives it a deep, rich flavor you can’t get on the stovetop.

Serving & Enjoying Your Jalapeno Popper Mac and Cheese
Once the top is golden and bubbling, remove from the smoker, let cool for a few minutes, and dig in! The combination of spicy jalapeños, smoky bacon, creamy cheese sauce, and crunchy topping makes this recipe a total crowd-pleaser.
Whether you enjoy it as a hearty side dish or the star of the meal, this jalapeno popper Mac is guaranteed to be one of your new favorite comfort foods. Each bite is packed with creamy texture, bold spice, and irresistible crunch—proof that comfort food can always find fresh, exciting new ways to shine.
