Crispy Pork Belly Burnt Ends are one of the best bites of BBQ you can make. Crunchy skin combined with sweet, smokey meat.

Ingredients

Scale
  • 3 pounds of skin on pork belly
  • 2 tbsp of BBQ Rub
  • 1/2 cup of Kosher Salt
  • 1/2 cup of BBQ sauce
  • 1 tbsp red wine vinegar

Instructions

  1. Take a 3lb pork belly slab with skin on and poke a bunch of little holes into it
  2. Cover it in kosher salt for 18-24hrs to help the skin dry out 
  3. Score the meat into 1.5×1.5 inch cubes and be careful not to cut all the way through.
  4. Season the meat with your favorite BBQ rub
  5. Insert MEATER Plus and place it on the smoker at 250F for 2.5 hours skin side up
  6. Brush BBQ sauce in the meat side the last 15 minutes
  7. Remove from smoker, then brush on red wine vinegar and place it in the oven and broil on low for 5-10 mins until crispy
  8. Cut into bite size pieces and enjoy!
