- 1 block of cream cheese, softened
- 2 fresh jalapeños, diced
- ½ lb of crispy bacon, chopped
- ¼ cup shredded cheddar cheese
- 1 tbsp garlic powder
- 1 large salmon filet, skin removed
- Your favorite BBQ rub
- Cedar plank (soaked in water for at least 30 minutes)
- BBQ sauce for glazing
Instructions
- Preheat the grill to 250° F using apple wood for a sweet, smoky flavor.
- In a large bowl, mix together 1 block of softened cream cheese, 2 diced jalapeños, 1/2 lb crispy chopped up bacon, 1/4 cup shredded cheddar cheese and 1 tbsp garlic powder.
- Remove the skin from the salmon, then season it with your favorite bbq rub.
- Spread the cream cheese mixture on top of the salmon.
- Roll the salmon nice and tight, starting on the tail end then secure it with twine.
- Cut between each piece of twine making individual salmon steaks.
- Season each salmon steak with more bbq rub ensuring it’s coated on all sides.
- Place the salmon steaks on a soaked cedar plank, then put them on the grill indirect of the heat at 250° F for 40 mins.
- Glaze each piece of salmon with your favorite bbq sauce for the last 15 minutes.
- Remove once the internal temp reaches 140° F and rest for 3 minutes.
