Leftover Brisket Fried Rice is the perfect easy weeknight meal! Smokey brisket, rice, vegetables topped with a smoky yum yum sauce.

Ingredients

  • 2 pounds of leftover brisket
  • 1 bag frozen peas and carrots
  • 4-6 cups day old rice
  • 1 large onion diced
  • 4 eggs
  • 2 tbsp Bachan’s
  • 2 tbsp green onions

Smoky Yum Yum Sauce

  • 1 cup mayo
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1/4 cup Bachan’s Original

Instructions

  1. Put the Homemade Yum Yum sauce together by combining all of the ingredients in a small bowl. Mix thoroughly until combined, then refrigerate until serving.
  2. Drizzle sesame oil down on the hot griddle then cook a diced onion and 1 bag of frozen peas and carrots for 3-4 minutes.
  3. Add 2 pounds of chopped up leftover brisket then drizzle Bachan’s on top. Mix together for 3-4 minutes until the brisket is warmed up.
  4. Add a stick of butter and 4 cups of day old rice then mix with cooked vegetables and brisket.
  5. Put 4 large eggs onto the griddle then scramble them until partially cooked.
  6.  and mix in with rice.
  7. Add green onions then mix everything together until fully combined.
  8. Serve rice and top with homemade Yum Yum Sauce.
