Pimento cheeseburger sliders loaded with ground beef, crispy bacon, and melty pimento cheese on Hawaiian dinner rolls.

Ingredients

  • 2 lbs 80/20 ground beef
  • 1 orange pack King’s Hawaiian Rolls
  • 1 lb bacon, crumbled
  • 4oz colby jack cheese, small cubes
  • 3 tbsp burger seasoning
  • 1 egg
  • 2 tbsp breadcrumbs
  • 3 tbsp chipotle mayo

Homemade Pimento Cheese

  • 1 block softened cream cheese
  • 2 cup cheddar cheese, shredded
  • 4 oz pimentos
  • ¼ cup pickled jalapenos
  • ½ cup mayo
  • ½ tsp each: onion powder, garlic powder, salt, black pepper, cayenne pepper, smoked paprika

Instructions

  1. Place the ground beef in a large bowl with the colby jack cheese, burger seasoning, egg, and breadcrumbs. Mix until thoroughly combined.
  2. Remove the King’s Hawaiian Rolls from the cardboard packaging. Carefully stuff the burger mixture into the shape of the packaging.
  3. Remove the burger mixture from the cardboard packaging and place it on a wire rack. Smoke at 250°F until cooked through.
  4. Meanwhile, assemble the pimento cheese by combining the cream cheese, cheddar cheese, pimentos, pickled jalapeños, mayo, onion powder, garlic powder, salt, black pepper, cayenne pepper, and smoked paprika in a bowl. Mix thoroughly and set aside.
  5. Cut the bacon into small pieces and cook in a skillet over medium heat until crispy. Remove and set aside.
  6. Remove the burger from the smoker once it reaches an internal temperature of 150°F.
  7. Toast the slider rolls. Then spread chipotle mayo on the rolls, add the smoked burger, crispy bacon, and pimento cheese. Replace the tops of the rolls.
  8. Cut into individual sliders and serve immediately.
