Steak and Egg Breakfast Sandwich

This sandwich is the breakfast of champions! Tender, juicy steak topped with a fried onions, a sunny side egg, and a truffle mayo.

Ingredients

  • 8 oz filet mignon 
  • 2 tbsp of Chili Coffee Steak rub
  • 1/2 yellow onion
  • 1 large egg
  • 1 slice of white cheddar cheese
  • 1/4 cup mayo
  • 1 tbsp Truff hot sauce
  • 1 Everything bagel
  • 1 tbsp butter

Instructions

  1. Preheat the griddle to cook over medium high heat.
  2. Generously season the filet mignon with your favorite steak seasoning. 
  3. Thinly slice 1/2 yellow onion then cook them on the hot griddle for 7-8 minutes until softened. 
  4. Add avocado oil to the griddle, then place the filet mignon down and let it cook for 3-4 minutes each side. Sear the steak on the edges and remove from the griddle once it reaches 135° F. 
  5. Add an egg to the the hot griddle and cook to “sunny side up” for 3-4 minutes. At the same time, spread butter on the inside of the bagel then place it down on the hot griddle until toasted. 
  6. Assemble the Truff mayo by combining 1/4 cup mayo with 1 tbsp of Truff hot sauce. 
  7. After a 5 minute rest, thinly slice the filet mignon for the most tender bite.
  8. Place the cheese down on the bottom of the bagel then heat it with a torch to melt the cheese. Add the steak, fried onions and sunny side egg.
  9. Spread Truff Mayo on the top of the bagel then finish assembling and enjoy!
