- 8 oz filet mignon
- 2 tbsp of Chili Coffee Steak rub
- 1/2 yellow onion
- 1 large egg
- 1 slice of white cheddar cheese
- 1/4 cup mayo
- 1 tbsp Truff hot sauce
- 1 Everything bagel
- 1 tbsp butter
Instructions
- Preheat the griddle to cook over medium high heat.
- Generously season the filet mignon with your favorite steak seasoning.
- Thinly slice 1/2 yellow onion then cook them on the hot griddle for 7-8 minutes until softened.
- Add avocado oil to the griddle, then place the filet mignon down and let it cook for 3-4 minutes each side. Sear the steak on the edges and remove from the griddle once it reaches 135° F.
- Add an egg to the the hot griddle and cook to “sunny side up” for 3-4 minutes. At the same time, spread butter on the inside of the bagel then place it down on the hot griddle until toasted.
- Assemble the Truff mayo by combining 1/4 cup mayo with 1 tbsp of Truff hot sauce.
- After a 5 minute rest, thinly slice the filet mignon for the most tender bite.
- Place the cheese down on the bottom of the bagel then heat it with a torch to melt the cheese. Add the steak, fried onions and sunny side egg.
- Spread Truff Mayo on the top of the bagel then finish assembling and enjoy!
