This Steak and Egg Breakfast Sandwich is the breakfast of champions.

Tender, juicy filet mignon cooked to perfection. Served on an Everything Bagel with a sunny side egg, white cheddar cheese and truffle mayo.

This may be a “breakfast sandwich”, but you’ll be craving this thing any time of day!

Ingredients you will need

Cut of meat: Beef filet mignon

Sandwich: Everything bagel, yellow onion and white cheddar cheese

Mayo: Truff Hot Sauce, mayo

Seasoning: Coffee Chili Steak Rub

How to make a Steak and Egg Breakfast Sandwich

Preheat the griddle to cook over medium high heat. I used my griddle that is built into my outdoor kitchen from KoKoMo Grills.

I season my BetterFed Beef filet mignon with some Coffee Chili Steak Rub from Spiceoloy and MeatEater.

Thinly slice 1/2 yellow onion then cook them on the hot griddle for 7-8 minutes until softened. 

Add avocado oil to the griddle, then place the filet mignon down and let it cook for 3-4 minutes each side. Sear the steak on the edges and remove from the griddle once it reaches an internal temperature of 135° F.

Add an egg to the the hot griddle and cook sunny side up for 3-4 minutes. At the same time, spread butter on the inside of the bagel then place it down on the hot griddle until toasted.

Assemble the Truff mayo by combining 1/4 cup mayo with 1 tbsp of Truff hot sauce. 

After a 5 minute rest, thinly slice the filet mignon for the most tender bite.

Place the cheese down on the bottom of the toasted bagel then heat it with a torch to melt the cheese. Add the thin slices of steak, fried onions and sunny side egg.

Spread some Truff Mayo on the top of the toasted bagel then finish assembling by putting it on top and enjoy!

Ingredients

  • 8 oz filet mignon 
  • 2 tbsp of Chili Coffee Steak rub
  • 1/2 yellow onion
  • 1 large egg
  • 1 slice of white cheddar cheese
  • 1/4 cup mayo
  • 1 tbsp Truff hot sauce
  • 1 Everything bagel
  • 1 tbsp butter

Instructions

  1. Preheat the griddle to cook over medium high heat.
  2. Generously season the filet mignon with your favorite steak seasoning. 
  3. Thinly slice 1/2 yellow onion then cook them on the hot griddle for 7-8 minutes until softened. 
  4. Add avocado oil to the griddle, then place the filet mignon down and let it cook for 3-4 minutes each side. Sear the steak on the edges and remove from the griddle once it reaches 135° F. 
  5. Add an egg to the the hot griddle and cook to “sunny side up” for 3-4 minutes. At the same time, spread butter on the inside of the bagel then place it down on the hot griddle until toasted. 
  6. Assemble the Truff mayo by combining 1/4 cup mayo with 1 tbsp of Truff hot sauce. 
  7. After a 5 minute rest, thinly slice the filet mignon for the most tender bite.

  9. Spread Truff Mayo on the top of the bagel then finish assembling and enjoy!
