- 16 oz ribeye steak
- 1 tbsp olive oil
- 2 tbsp favorite steak seasoning
- 6 Yellow corn tortillas
- 1 cup Oaxaca cheese
- ½ cup Cotija Cheese
Homemade Guacamole
- 2 avocados
- ¼ cup finely diced red onion
- ¼ cup finely diced jalapeno
- 3 tbsp chopped cilantro
- 1 tsp garlic powder
- ½ lime juice
- ½ tsp salt
- ½ tsp black pepper
Chipotle Creama
- 6 Chipotle peppers in adobo
- ½ cup Mexican crema
- Juice from 1 lime
- 3 tbsp cilantro
- 1 tsp garlic powder
- ½ tsp cumin
- ½ tsp cayenne pepper
- ½ tsp salt
Instructions
- Cube the ribeye steak into ½ inch x ½ inch cubes. Coat the cubed steak in olive oil then with your favorite steak seasoning.
- Assemble the homemade guacamole by combining all of the ingredients in a bowl then mixing it thoroughly. Cover and refrigerate until serving.
- Assemble the homemade Chipotle cream by combining all ingredients in a food processor and mixing it until smooth. Store in an airtight container then refrigerate.
- Cook seasoned steak over high heat on a griddle until it reaches your desired internal temperature.
- Toast corn tortillas on both sides then add Oaxaca cheese and let it melt.
- Assemble the tacos with guac, cooked steak then top with Chipotle crema and cotija cheese.
