This Wagyu Steak Melt is one of the best things you can grill up!

Wagyu steak upgrades this meal as it’s some of the best beef you can get. The caramelized red onions and garlic aioli bring it to a whole different level though.

Ingredients you will need

Protein: Wagyu flank steak

Cheese: Gruyere

Garlic Aioli: Mayo, garlic, lemon and pepper

Bread: Brioche or sourdough

Caramelized Onions: Red onion, salt, balsamic vinaigrette

How to make a Wagyu Steak Melt

Season a Snake River Farms American Wagyu flank steak with a salt, pepper, garlic powder blend.

Wagyu Flank Steak

Fire up your grill and get it setup for direct heat cooking. I am grilling over charcoal for this cook so that I can get a good hot sear and give the meat some added level of flavor.

While the grill is heating up, slice up a red onion. Place the slices in a frying pan over medium heat with butter and let it cook for 15-20 minutes. Add balsamic vinaigrette at the end to help deglaze the pan and add more flavor to the onions.

Assemble the garlic aioli by combining mayo, lemon juice and roasted garlic in a bowl and mixing it. Place it in the fridge until it’s time to serve. This is good for 3-5 days in an airtight container stored in the fridge.

Grill the steak over direct heat flipping it every 2-3 minutes. Remove it from the grill once it reaches 135°F internal.

Let it rest for 5-10 minutes before thinly slicing it. Make sure that you are slicing against the grain for the most tender bite. The grain is easily identifiable with a flank steak.

Spread some garlic aioli on the outside of the bread then place it in a pan over medium heat. Add slices of steak, caramelized onions and freshly grated gruyere cheese. Place another piece of bread on top and cook for 2-3 minutes each side.

Once the bread is golden brown and the cheese is melted, remove it from the skillet and slice it in half.

  • Brioche bread
  • 1 cup gruyere cheese

  • 1/2 cup mayo
  • 1 head roast garlic
  • Juice from 1 lemon
  • 1/2 black pepper
