How to make Blueberry Prosciutto and Brie Jalapeno Poppers

Slice whole jalapenos in half lengthwise with a sharp knife. Carefully scrape out the seeds and veins with a spoon and discard of them.

cut up jalapenos

Slice a wheel of brie into individual slices that fit into half of a jalapeno. I removed the rind edges from each slice of brie, but you can easily leave the rind on.

Place a slice of brie cheese on one half of the hollowed jalapeno, then fill the other side with blueberry jam or blueberry preserves. The possibilities are endless here – you can use any flavor of jam that you like.

Combine a brie side with a blueberry side then tightly wrap it in a slice of prosciutto.

Spray the outside of the popper with some cooking oil then generously season it with your favorite BBQ rub.

Place all of the jalapeno poppers on an oiled wire rack then place the rack directly on the smoked at 300°F for 45 minutes. I like to leave the poppers on the rack as it helps with transporting the poppers to and from the smoker.

If you do not have a smoker, you can easily do these in your oven and they will still turn out great! Follow the same time and temperatures for similar results!

Glaze the outside of the jalapeno poppers with hot honey the last 15 minutes to allow it to tack up and become sticky.

Once the jalapenos have softened and the brie has crisped up, remove them from the smoker. Serve them up warm and enjoy.
