Crispy pork belly with guacamole is one of those foods I didn’t know I needed until trying it. The crispy, salty pork belly combined with the creamy guac was truly sensational.

This combination has been trending on social media for some time now and I knew I needed to give it a try. I chose to do a variation of the trend by first smoking the pork belly then placing it in the air fryer until crispy. There was a ton of smokey flavor in each crispy bite.

Ingredients you will need

Protein: Pork Belly – ideally skin on, but you can also use skinless for this recipe

Fresh Guacamole: Avocado, red onions, diced jalapeños, fresh cilantro, lime juice, garlic powder, salt, black pepper.

How to make Crispy Pork Belly with Guacamole

Start off by taking your piece of pork belly and place it fat side up on a wire rack with a cookie sheet underneath.

Heavily salt the pork belly fat with Kosher salt and place it in the fridge overnight. This will help remove moisture from the fat which will help it get crispy.

If you are doing pork with skin on, you would do the same thing which will help the skin get a lot crispier.

Brush the salt off of the pork belly then cut the pork belly into 1/2 inch thick slices. Season the pork belly sides with black pepper and garlic powder. You do not need to add more salt.

Smoke the pork belly at 275°F for 2 hours using cherry wood. Once they reach an internal temperature of 170°F, remove them from the smoker.

While the pork is smoking, assemble all of the guacamole ingredients in a bowl then refrigerate.

Place them in the air fryer at 400°F for 10 minutes each side. Remove them from the air fryer once they reach an internal temp of 200°F and they are crispy.

Assemble the homemade guacamole by combining all of the ingredients in a bowl. Mix thoroughly then refrigerate until serving.

Serve with a side guacamole to dip the pork belly in and enjoy! You can also put these on a corn tortilla and add a squeeze of lime juice.

  • 1 pounds of skinless pork belly
  • 3 tbsp SPG blend seasoning
  • 2 ripe avocados
  • 2 fresh jalapeños, diced
  • 1/4 red onion, diced
  • 1 bunch Fresh Cilantro
  • Juice from 1 lime
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Take a 1 lb of pork belly and heavily salt the fat cap overnight to help remove moisture 
  2. Wipe excess salt off and cut into 2 inch thick strips 
  3. Season the meat with pepper and garlic powder on all sides
  4. Smoke the pork belly at 275F for 2 hours until they reach an internal temp of 170F
  5. Place them in the air fryer at 400F for 10 mins each side 
  6. Dip in guac and enjoy!
