Marry Me Chicken Soup Recipe is a family favorite and it’s packed with a ton of flavor!

This soup is loaded with tender chicken and delicious pasta in a creamy sun-dried tomato sauce. With this recipe only taking 30-minutes to make, it works great during a busy week!

Ingredients you will need

Meat: Skinless chicken breast and thick cut bacon

Liquids: Chicken broth, heavy cream

Vegetables: Onion, sundried tomatoes, garlic, fresh spinach and fresh basil

Cheese: Cream cheese, parmesan cheese or parmigiana reggiano

Seasoning: Salt, black pepper, red pepper flakes. Italian seasoning

Pasta: Egg noodles, orecchiette pasta

How to make Marry Me Chicken Soup Recipe

Generously season chicken breasts with your favorite chicken seasoning on all sides.

Grill the chicken breasts over medium-high heat until they reach an internal temperature of 165°F.

Rest for 5 minutes then chop chicken into bite sized pieces and set aside. If you’re using a rotisserie chicken, add the shredded chicken to a bowl and set it aside.

Fry up the bacon in a dutch oven until crispy then drain the excess fat less 4 tablespoon.

Dice up an onion then fry it in the bacon grease for 3-4 minutes over medium heat.

Toss in the minced garlic and cook for 1 minute, until the garlic becomes fragrant. Pour in the flour then mix and cook for 1-2 minutes.

Add the sun dried tomatoes, chicken broth and heavy cream then mix thoroughly.

Add room temperature cream cheese and parmesan cheese then simmer until it melts and is fully combined.

Next, add in the chopped up juicy chicken breasts, cooked pasta, salt, pepper, Italian seasoning, red pepper flakes then simmer for an additional 4-6 minutes on low heat.

Add the spinach in and give the soup a stir until the spinach wilts.

Serve the creamy chicken soup hot then garnish with parmesan cheese and fresh basil.

  • ½ cup sundried tomatoes
  • 4 cloves of minced garlic
  • 6 cups of chicken broth
  • 8 oz heavy whipping cream
  • 8 oz philadelphia cream cheese
  • 1 cup parmesan cheese (freshly grated)
  • 1 cup fresh spinach
  • 1 tsp sea salt
  • 1 tsp black pepper
  • ½ tsp crushed red pepper
  • 16 oz Pasta
  • 2 tbsp fresh basil

Instructions

Notes

If the soup thickens too much, add some additional chicken broth to thin it out.
