Creamy Sausage Tortellini Soup is the perfect way to kick off soup season!

This hearty soup takes 20 minutes to make and it has great flavor the whole family will love. Sweet Italian sausage, creamy broth and cheesy tortellini for the perfect bite!

Ingredients you will need from the grocery store

Meat: Spicy, mild or sweet Italian sausage. Alternative meat options: Smoked sausage, turkey sausage or kielbasa sausage 

Veggies: Medium onion (yellow or white), garlic, carrots, fresh spinach 

Broth: Chicken broth or chicken stock and heavy cream, tomato paste, flour

Tortellini Pasta: Three Cheese Tortellini 

Seasoning: Italian seasoning, salt and black pepper

How to make Creamy Sausage Tortellini Soup

Brown 1 pound of Italian sausage for 4-5 minutes over medium heat in a large pot or Dutch oven. Remove the sausage when it’s done then set aside in a paper towel lined bowl to absorb any excess grease. You can either use ground sausage or you can remove the casing from sausages and break up the meat.

Saute onion, 1 cup of chopped carrots and 3 cloves of minced garlic for 5 minutes over medium-low heat.

Add 1 tbsp Italian seasoning, 1 tsp salt, 1 tsp black pepper, 1/4 cup flour and 6oz tomato paste then let it cook for 2-3 minutes. 

Pour in and deglaze the bottom of the pot with 6 cups of chicken broth and 1 cup of heavy whipping cream. Be sure to scrape the bottom of the pot with a wooden spoon to remove any browned bits.

Add the sausage back in, 9oz of tortellini and 3 cups of chopped spinach then bring the pot of soup to a simmer for 5 minutes.

Serve the warm bowl of soup with a sprinkle of parmesan cheese on top. Enjoy with a Caesar salad and a side of garlic bread.

​Be sure to make some extra for leftovers or meal prep! Store the soup in an airtight container for 3-4 days and warm up when you’re ready to eat.

  • 1 pound of italian sausage
  • 9 oz of three cheese tortellini
  • 1 large yellow onion
  • 1 cup of chopped carrots
  • 3 cloves of minced garlic
  • 6oz tomato paste
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 3 cups spinach
  • 1 tbsp Italian seasoning
  • ¼ cup flour

Instructions

  2. Sauté 1 diced onion, 1 cup of chopped carrots a 3 cloves minced garlic for 5 minutes over medium heat.
  3. Add 1 tbsp Italian seasoning, 1 tsp salt, 1 tsp black pepper, 1/4 cup flour, 6oz tomato paste then let it cook for 2-3 minutes.
