How to make Cajun Chicken Alfredo

Start by putting together the Homemade Cajun Seasoning by combine all of the seasonings in a bowl and mixing them thoroughly.

Add some olive oil on the chicken breast as a binder then generously season all sides of the chicken with the cajun spices.

I recommend adding more seasoning than you think as it will cook out in the pan. It is best to season your chicken a few hours ahead of time if you can, otherwise season and let it sit for 10 minutes.

Place the chicken breasts in large skillet over medium-high heat and cook the chicken for 3 minutes each side then reduce to a medium heat. Remove it from the pan once it reaches an internal temperature of 165° F.

I recommend letting the chicken rest for 5-10 minutes before slicing against the grain. This will allow the juices in the chicken to redistribute throughout the meat.

Add in 2 tbsp of butter and 3 cloves of minced garlic to the skillet then let the garlic cook for 1 minute until fragrant.

In a large pot, bring the water to a boil then add in the fettuccine noodles and let them cook for 5-7 minutes until al dente. Once they are done, strain and run them under cold water to stop the cooking process.

Add in 1 cup chicken broth or pasta water to help deglaze the pan from the cooked chicken. Be sure to lightly scrape the bottom to mix in any brown bits of flavor.

Once deglazed, add in 1 cup of heavy whipping cream, 1 tbsp of corn starch and 1 cup of grated Parmesan cheese. Mix thoroughly then let it cook for 3-4 minutes until the sauce thickens.

Once the sauce has thickened, reduce to a low heat then add the cooked fettuccine to the pan.  Thoroughly mix to ensure the pasta is coated in the creamy Alfredo sauce.

Serve the creamy fettuccine Alfredo on a plate then top it with the juicy chicken breast. Garnish with fresh parsley then enjoy!

FAQs for Cajun Chicken Alfredo

How long is Cajun Chicken Alfredo good for?

You can store it refrigerated in an airtight container for 2-3 days which makes for great meal prep.

Is this a kid friendly recipe because of the cajun seasoning?

Yes, I intentionally made this recipe with less spice so that my kids would enjoy it. You can always add more cayenne pepper and red pepper flakes if you want to increase the heat.

Can I use chicken thighs instead of chicken breasts?

Absolutely! Chicken thighs have a higher fat content and are typically a lot juicer. I would highly recommend trying chicken thighs if you were to grill the chicken instead of cooking it in the skillet.

What kind of wine pairs well with this meal?

A white wine like a Chardonnay pairs well with this meal since it has a buttery taste.
