Deep frying: Canola oil

How to make Cajun Chicken Fried Wontons

Start by preparing your grill for direct cooking over medium hight heat.

While the grill is heating up, trim off the excess fat from the boneless skinless chicken thighs, then generously season them with Chicka Licka Bam Bam.

Grill the chicken and the andouille sausage over direct heat for 2 minutes each side to build up some great flavor. Move them both to the indirect side of cooking, then toss in some cherry wood to add in a fruity smoke flavor. Once the chicken reaches an internal temp of 165°F then remove from the heat.

Dice up your onion, then chop up the chicken and the andouille sausage into bite size pieces.

In a bowl, combine the chicken, andouille sausage, onion, cream cheese and cheddar cheese and mix thoroughly until everything is combined.

Grab a wonton and place 1 tablespoon of the mixture into the middle of it. Wet your finger with water, then run it along the inside edge of the wonton. Fold the wonton in half to make a triangle. Secure the edge of the wonton so that it is fully enclosed to help prevent your wonton from opening up during the deep frying process.

Prepare the frying oil by filling a cast iron skillet with oil then bring it to a temperature of 350°F.

Once the oil is hot, add in 6-8 wontons and let them fry for 1 minute each side. Once they turn golden brown, remove them from the oil and place them on a plate with a paper towel to absorb any excess oil.
