How to make Grilled Greek Chicken Skewers
Preparing and marinating the chicken
Start off by putting together the homemade Tzatziki sauce by combining all of the ingredients in the recipe card in a small bowl, then mix thoroughly. Place in an airtight container and store in the refrigerator for up to a week.

Trim excess fat off of boneless skinless chicken thighs with a sharp knife. Next, cube each thigh up into 1 inch chunks.
Place the cubed chicken in a large bowl then add in the marinade ingredients: olive oil, lemon juice and “The Greek” seasoning. Place the bowl in the refrigerator and let the chicken marinate for a minimum of 2 hours or up to 24 hours. the longer you let these marinate, the more flavor they will take on.
30 minutes prior to cooking, soak the bamboo skewers in some water. The wood will absorb the water which help prevent them from burning up during the cook. You can also use metal skewers for this part instead.
Next, Fire up the grill and get it setup for direct heat cooking. I used my Nomad Grill for this cook which gives the chicken some great charcoal flavor. If you do not have an outdoor grill, you can also cook these on an indoor grill pan.
Grilling the chicken skewers
Remove the wooden skewers from the water and drain the excess water. Place 4-5 of the marinated chicken pieces on the wooden skewers.

Place chicken directly on the grill grates over medium-high heat on your grill and flip them every 2-3 minutes.

Once the chicken develops some great char and they reach an internal temperature of 165°F, remove it from the grill.

Drizzle the homemade Tzatziki sauce on top of the the grilled meat. Serve with a warm pita, your favorite hummus, tomatoes, cucumbers and Kalamata olives.

These are a perfect easy weeknight meal, but they also work great for meal prepping. Store them in an airtight container and eat them the next day for the most fresh flavor.
