This 3 ingredient smoked bacon wrapped pickles recipe is super easy to make.

They make a great snack or they can be the perfect appetizer. Dip them in some homemade ranch for the perfect smokey, zest bite. This is a a huge crow pleaser and a fun way to serve up a delicious appetizer.

Ingredients you will need

Protein: Smoked Bacon

Pickles: Dill Pickle Spears

Seasoning: BBQ Rub – Pork Perfect 

Ranch Dressing – Mayo, sour cream, broth, apple cider vinegar, ranch seasoning 

How to make Smoked Bacon Wrapped Pickles

Cooking method

Begin by getting your smoker setup for indirect cooking. I used my Nomad Grills which is a portable charcoal grill and smoker. I added in some cherry wood for some sweet smokey flavor. A pellet grill would also work great for this cook as there is a lot more air flow and the bacon gets crispier. 

​If you do not have a smoker, you can easily make this recipe in your oven or air fryer. Follow the same cooking temp of 350°F and remove them once the bacon is crispy. If you are cooking them in the oven, place them on a wire rack with a baking sheet lined with parchment paper underneath. This will help catch any bacon grease and prevent a huge mess in your oven. 

Wrap the pickle in bacon

Next, make sure you choose your favorite type of pickles. I used dill pickles and wrap each one of them in a slice of bacon.  I would highly recommend using thin slices of bacon which will give you the best results. Thick-cut bacon can sometimes be too thick and not securely wrap around the pickles as it cooks. 

Season the bacon with your favorite BBQ rub. I used Pork Perfect from Fire & Smoke Society which gives it a sweet heat flavor profile.

Place the pickle on the smoker

Place the bacon-wrapped pickles indirectly on the smoker and let them smoke at 350 degrees f for about 30 minutes.

Make the Homemade Ranch

While the pickles are smoking, it’s time to make the dipping sauce. Homemade ranch is super easy to make and it’s way better than the store bought stuff. In a bowl, combine mayo, sour cream, chicken broth, apple cider vinegar and seasoning.

Mix all of the ingredients thoroughly until smooth then place it in a mason jar or airtight container. This ranch dressing will be good for up to a week, so don’t be afraid to make extra. You can also add 1 ounce of cream cheese to this recipe for a creamier ranch. 

Serve them up

Once you have crispy bacon on the pickles, remove them from the smoker.  Place them on a plate lined with a paper towel to absorb any excess bacon fat.

Serve them up with the homemade ranch. You can also brush on some of your favorite BBQ sauce on the outside the last 10 minutes of the cook to add more flavor.

Bacon wrapped pickles are the perfect fun appetizer to serve up! They are super easy to make and only take 3 ingredients to make.

    • 12 Pickle spears
    • 1 pound of bacon
    • 2 tbsp BBQ rub

    Homemade Ranch 

    • 3/4 cup mayo
    • 1/2 cup sour cream
    • 1/2 cup chicken broth
    • 1 tsp apple cider vinegar
    • 2 tbsp Rodeo Ranch seasoning

    Instructions

    1. Take a pickle spear and wrap it in thinly sliced bacon.
    2. Season the bacon with a pork rub on the outside.
    3. Place the pickles on the smoker at 350°F for 20-30 minutes until bacon is crispy.
    4. Serve them with ranch dipping sauce and enjoy!
