Bacon wrapped burger stuffed onion rings are the appetizer you didn’t know you needed until now!
These delicious bites of barbecue are made up of burger stuffed between two onion rings, then wrapped in bacon and smoked to perfection. Glaze the outside with some BBQ sauce and you have the perfect sticky finger food.
Be sure to give this recipe a try at your next barbecue! These are super fun to serve when having people over.
Ingredients you will need
For today’s cook, I used a variety of Wahlburgers at home products. Their Kobe Blend patties are packed with a ton of rich beefy flavor, but you can also use whichever ground beef mixture you have available.
For the onion ring: Ground beef, bacon and sweet onions (yellow onion)
Sauce: BBQ sauce and Wahl sauce for dipping
Seasoning: Burger rub and your favorite BBQ rub
How to make Bacon Wrapped Burger Stuffed Onion Rings
Start off with cutting the onion into 1/2 inch thick onion slices. Take the large onion rings and place 1/4 pounds of burger on the inside of it. Find a smaller onion from towards the bottom of the ring that will fit on the inside of the larger onion. Form a hole in the middle and pack the burger to the sides so that the smaller onion will fit in it.
Season the burger with your favorite burger rub or a salt, pepper, garlic powder and onion powder blend works great too. Carefully wrap the burger stuffed onion ring with some bacon so that it’s fully enclosed. I used hickory smoked strips of bacon from Wahlburgers at Home. I would highly recommend not using thick cut bacon for this cook as it will not wrap as well.
Wrap your onion rings in slices of bacon. Once fully wrapped in bacon, season all asides of the bacon using one of your favorite BBQ rubs. I used Scorpion rub from Blazing Star BBQ.
I indirectly smoked the stuffed onion rings on the Nomad Grill with a low medium heat of 275 degrees f for 60 minutes using a cherry wood chunk.
The last 15 minutes of the cook, brush on some BBQ sauce all over the outside of the bacon. Remove it from the smoker once the sauce tacks up and the center of the beef reaches an internal temperature of 145°F.
Serve them up with Wahlburgers Wahl Dipping Sauce or some hot sauce and enjoy every last bite!
Looking for something to do with the remaining rings? You can give them an egg wash and coat them in bread crumbs that are in a small bowl. Deep fry them at 350°F in some vegetable oil until they turn golden brown. Place them on a paper towel to drain any excess oil and sprinkle on a teaspoon of salt.

Ingredients
- 1 pound of ground beef
- 1 large yellow onion
- 1 pound of bacon
- 1 tbsp burger rub
- 2 tbsp BBQ rub
- 1/4 cup BBQ sauce
- Wahl Sauce for dipping
Instructions
- Slice the onion into 1/2 inch slices
- Place 1/4 pound of burger on the inside of a large sliced onion.
- Form a hole in the middled and insert a smaller onion that will fit on the inside of the larger onion.
- Season the burger with your favorite burger rub, then carefully wrap with some bacon. Season all asides of the bacon using one of your favorite BBQ rubs.
- Smoke the stuffed onion rings at 275°F for 60 minutes using cherry wood.
- Brush BBQ sauce on the outside of the bacon the last 15 minutes.
- Remove it from the smoker once the sauce tacks up and the burger reaches an internal temperature of 145°F.
- Serve them up with Wahl Sauce and enjoy!

One of people’s favorite things I have made. Everybody wanted more of these! Wrapping the bacon had a learning curve on the first one, but after that it was a piece of cake.
I just grilled on the regular BBQ, low and slow, we enjoyed but smoking would have been better as I have used a smoker before. Where did you get the smoker box shown in the picture? Does it just go on the BBQ grill?
